Chantaboon Pad Thai Dried Rice Noodles

Flat, thin, dried rice noodles, often used in Pad Thai. Dried rice noodles are already cooked, so they need only to be rehydrated.The noodles should be soaked 15 to 20 minutes until they have softened and untangled. A preliminary soaking before heating improves the flavor and texture of the noodles. Presoaking and then rinsing also washes away starch that will otherwise cloud soups and sauces.
